Chef Dave comes from central Iowa where he attended ICI (Iowa Culinary Institute.) After graduating with honors, Chef Dave headed overseas to extend his culinary education spending time in parts of Spain and France. There, he trained with talented local chefs and completed an externship outside of Paris.
Most of Dave’s professional career has been in the private club setting. Before coming to the Mesquite Grill, Dave was at a large Midwest private club in central Iowa. There, as the Executive Sous Chef, he enjoyed using fresh, local, farm to table ingredients. Those experiences developed his taste for food today. Chef Dave says his food is focused on bold flavors that incorporate a variety of ingredients from cuisines across the globe, with taste being the driving factor.
Dave has been with the Mesquite Grill at Tonto Verde since 2012. Here, he loves the views, the warm and welcoming members, and the appreciation he receives for his culinary creations. Dave says he enjoys challenging himself with new techniques and flavors, along with fresh new ingredients.
When Dave is not preparing wonderful dishes, he loves spending time with his wife, Laura; his daughter, Tatum; and friends.
